Ingredients

3 cupsTomatoes, fresh, seeded, 1/4-inch dice
3/4 cupSchwartz’s® Spicy Dill Spears, 1/4-inch dice
1/4 cupOlive oil
3 tbspBasil, fresh, minced
3/4 tspSalt
3/4 tspBlack pepper, freshly ground
48 slicesItalian bread, sliced 1/2-inch thick, toasted
3 lbsMozzarella cheese, fresh, sliced 1/4-inch thick

Procedure

  1. Combine diced tomatoes, Schwartz’s® Spicy Dill Spears, olive oil, basil, salt, and pepper in a bowl.
  2. Let sit for at least 30 minutes.

To Serve: 

  1. Top each toasted bread slice with one slice of mozzarella cheese.
  2. Place under broiler or salamander for 2 to 3 minutes to melt cheese.
  3. Top with 2 tablespoons bruschetta.

Yield: 24 Servings
