Ingredients

2 cupsTomatoes, fresh, seeded, 1/4-inch dice
2 tspOlive oil
2 tspBalsamic vinegar
2 tspBasil, fresh, minced
1/4 tspSalt
1 cupAlfredo Sauce, prepared
1/4 cupParmesan cheese, grated
4 eachFlatbread, prepared, 4 x 12-inch rectangle
2 cupsChicken breasts, cooked, 1/4-inch dice
1 cupBay Valley® Brand Sliced Pepperoncini, drained
2 cupsMozzarella cheese, shredded

Procedure

  1. In a small bowl, combine tomatoes, olive oil, balsamic vinegar, fresh basil, and salt. Marinate for at least 30 minutes.
  2. In another small bowl, combine Alfredo sauce and Parmesan cheese.

To make one flatbread:

  1. Spread flatbread with 1/4 cup Parmesan Alfredo sauce. Top with 1/2 cup diced chicken, 1/2 cup tomato mixture, 1/4 cup Bay Valley® Brand Sliced Pepperoncini, and 1/2 cup mozzarella cheese.
  2. Place under broiler or salamander to melt cheese. Cut into six slices.

Yield: 24 Servings
