Ingredients

6 lbsAsparagus, trimmed, cut into 1-inch pieces
12 cupsSnow peas
12 cupsRed bell pepper, julienned
3/4 cupVegetable oil
12 cupsCarrot, shredded
48 ozWater chestnuts, sliced, drained
6 lbs + 12 oz (18 cups)Asian Pad Thai Noodles, cooked
1 qtRod’s® Thai Sesame Dressing
6 cupsPeanuts, chopped
1/2 cupGreen onions, chopped

Procedure

  1. In a large skillet over medium-high heat, sauté asparagus, snow peas, and red pepper in oil for 2-3 minutes or until tender.
  2. Add carrot, water chestnuts, cooked noodles and Rod’s® Thai Sesame Dressing; heat through.
  3. Serve topped with peanuts and green onions.

Yield: 24 Servings
