Ingredients
12 cups (3 qt) | Cooked, shredded chicken |
4-1/2 cups | Saucemaker® Baja Chipotle Sauce, warmed |
24 each | Bolillo rolls, sliced, toasted |
1 lb | Queso Fresco Cheese, crumbled |
1 each | Pineapple, fresh, peeled, sliced 1/4-inch thick, grilled |
1 qt | Bay Valley® Brand Hot Sliced Cherry Peppers, drained |
Procedure
- Combine cooked chicken with warmed Saucemaker® Baja Chipotle Sauce.
To Make One Sandwich:
- Layer grilled Bolillo roll with 1/2 cup Baja chicken, 2 tbsps crumbled cheese, 1 slice grilled pineapple, and 4 slices of Bay Valley® Brand Hot Sliced Cherry Peppers.

Chef's Tip:
