Ingredients

48 peppersJalapeño peppers, fresh, 3-inches long
2 cupsChorizo sausage, cooked
2 cupsRed bell peppers, 1/8' dice
4 cupsPanko bread crumbs
24 oz (3 cups)Bay Valley® Brand Cheddar Cheese Sauce
1 tspSalt

Procedure

  1. Wearing gloves, carefully cut a small opening on the top of the pepper; remove the seeds and pulp, keeping the stem on.
  2. In a large bowl, combine the fully cooked chorizo sausage, red, peppers, panko bread crumbs and cheddar cheese sauce.
  3. Stuff each pepper with 2-3 tablespoons filling.
  4. Bake at 375°F for 8-10 minutes or until internal temperature of filling reaches 165°F.
  5. Serve with additional cheese sauce.

Yield: 24 Servings

Chef's Tip:

Add more heat by using our Jalapeño or Nacho Cheese Sauces.
