Ingredients

4 qtsSan Antonio Farms® Chunky Salsa
2 qtsTomato juice
8 cupsCucumbers, peeled, seeded and chopped
4 cupsRed onions, diced
4 cupsYellow bell peppers, diced
1-1/2 cupsLime juice, fresh
1/2 cupCilantro, fresh, minced
To tasteSalt & pepper
84 -112 piecesBaby shrimp
To garnish (optional)Avocado, chopped

Procedure

  1. Combine the salsa, tomato juice, cucumbers, red onions, peppers, lime juice and cilantro; cover and refrigerate for at least 2 hours.
  2. Top each serving with 3-4 pieces baby shrimp; garnish with chopped avocado.

Yield: 28 Servings
