Ingredients
4 qts | San Antonio Farms® Chunky Salsa |
2 qts | Tomato juice |
8 cups | Cucumbers, peeled, seeded and chopped |
4 cups | Red onions, diced |
4 cups | Yellow bell peppers, diced |
1-1/2 cups | Lime juice, fresh |
1/2 cup | Cilantro, fresh, minced |
To taste | Salt & pepper |
84 -112 pieces | Baby shrimp |
To garnish (optional) | Avocado, chopped |
Procedure
- Combine the salsa, tomato juice, cucumbers, red onions, peppers, lime juice and cilantro; cover and refrigerate for at least 2 hours.
- Top each serving with 3-4 pieces baby shrimp; garnish with chopped avocado.
