Ingredients

5 cupsAll-purpose flour
2-1/2 cupsCornmeal, fine
5 tspCoriander, ground
2-1/2 tspCumin, ground
2-1/2 tspSalt
1-1/4 tspBaking powder
5 mediumEggs, lightly beaten
20 oz (2-1/2 cups)Bay Valley® Brand Cheddar Cheese Sauce
10 cupsCorn, frozen, thawed
2-1/2 cupsSweet red pepper, 1/4" dice
1-2/3 cupsGreen onions, chopped
1/2 cupCilantro, fresh, minced
As neededFrying oil
To garnish (optional)San Antonio Farms® Roasted Chipotle Salsa

Procedure

  1. Stir together the flour, cornmeal, coriander, cumin, salt, and baking powder in a large bowl.
  2. Add eggs and cheese sauce; stir until smooth.
  3. Mix in the corn, red pepper, green onions, and cilantro until combined. Form 2 tablespoons of batter into 2-inch diameter patties.
  4. Cook fritters in 1-inch of oil in a skillet for 2-3 minutes a side, or until browned, and internal temperature reaches 165°F.
  5. Serve with San Antonio Farms® Roasted Chipotle Salsa on the side, if desired.

Yield: 4 Servings

Chef's Tip:

Add more heat by using Bay Valley® Brand Jalapeño Cheese Sauce.
