Ingredients
3 lbs (48 cups) | Salad greens |
12 cups | Tomato, 1/2" dice |
3 cups | Red onion, 1/4" dice |
8 lbs | Battered shrimp, deep fried |
3 qts | San Antonio Farms® Roasted Chipotle Salsa |
6 cups | Avocado, 1/4" dice |
1-1/2 cups | Jalapeño pepper, fresh, sliced 1/4'' thick rounds |
As side (optional) | Ranch dressing |
Procedure
To Build One Salad/Serving:
- Arrange 2 cups salad greens on a serving plate.
- Top with 1/2 cup diced tomato, and 2 tablespoons diced red onion.
- Toss 6 ounces fried shrimp with 1/2 cup San Antonio Farms® Roasted Chipotle Salsa; arrange on top of salad.
- Top with 1/4 cup diced avocado and 1 tablespoon sliced jalapeño peppers.
- Drizzle with Ranch dressing, if desired.
