Ingredients

3 lbs (48 cups)Salad greens
12 cupsTomato, 1/2" dice
3 cupsRed onion, 1/4" dice
8 lbsBattered shrimp, deep fried
3 qtsSan Antonio Farms® Roasted Chipotle Salsa
6 cupsAvocado, 1/4" dice
1-1/2 cupsJalapeño pepper, fresh, sliced 1/4'' thick rounds
As side (optional)Ranch dressing

Procedure

To Build One Salad/Serving:

  1. Arrange 2 cups salad greens on a serving plate.
  2. Top with 1/2 cup diced tomato, and 2 tablespoons diced red onion.
  3. Toss 6 ounces fried shrimp with 1/2 cup San Antonio Farms® Roasted Chipotle Salsa; arrange on top of salad.
  4. Top with 1/4 cup diced avocado and 1 tablespoon sliced jalapeño peppers.
  5. Drizzle with Ranch dressing, if desired.

Yield: 24 Servings

You can also use our Chunky or Roasted Red Pepper Salsa in this recipe, as well as our pickled Jalapeño Peppers.
