Ingredients
2 cups | Tomatoes, fresh, seeded, 1/4-inch dice |
2 tsp | Olive oil |
2 tsp | Balsamic vinegar |
2 tsp | Basil, fresh, minced |
1/4 tsp | Salt |
1 cup | Alfredo Sauce, prepared |
1/4 cup | Parmesan cheese, grated |
4 each | Flatbread, prepared, 4 x 12-inch rectangle |
2 cups | Chicken breasts, cooked, 1/4-inch dice |
1 cup | Bay Valley® Brand Sliced Pepperoncini, drained |
2 cups | Mozzarella cheese, shredded |
Procedure
- In a small bowl, combine tomatoes, olive oil, balsamic vinegar, fresh basil, and salt. Marinate for at least 30 minutes.
- In another small bowl, combine Alfredo sauce and Parmesan cheese.
To make one flatbread:
- Spread flatbread with 1/4 cup Parmesan Alfredo sauce. Top with 1/2 cup diced chicken, 1/2 cup tomato mixture, 1/4 cup Bay Valley® Brand Sliced Pepperoncini, and 1/2 cup mozzarella cheese.
- Place under broiler or salamander to melt cheese. Cut into six slices.
