Ingredients

1 qtBay Valley® Brand Jalapeño Cheese Sauce
1/2 cupRoasted red peppers, diced
2 tspCumin, ground
1 tspOregano, dried
1 tspSalt
1 tspGarlic powder
1 tspOnion powder
1 tspChili powder
1 tspBlack pepper
48 slicesSourdough bread, sliced ½-inch thick, grilled
3 qtsIceberg lettuce, shredded
1 qtSan Antonio Farms® Roasted Chipotle Salsa
24 eachChicken breasts, boneless, skinless, sprinkled with chipotle seasoning, grilled, 5 oz.

Procedure

To Make Fajita Cheese Sauce: 

  1. Mix all ingredients until combined.
  2. Warm sauce before serving.

To Make One Sandwich: 

  1. Layer grilled sourdough bread with 1/2 cup shredded lettuce, 2 to 3 tablespoons San Antonio Farms® Roasted Chipotle Salsa, grilled chicken breast, and 2 to 3 tablespoons fajita cheese sauce.

Yield: 24 Servings

Chef's Tip:

To add smoky flavor, purée Chipotle Peppers in Adobo Sauce and mix 3-4 tablespoons into the Jalapeño Cheese Sauce.
