Ingredients
12 lbs | Rice noodles |
10 cups | Saucemaker® Sweet Chili Sauce |
1/2 cup | Soy sauce |
1-1/2 cups | Lime juice |
1/2 cup | Fish sauce |
12 each | Chicken breasts, grilled, sliced |
24 cups | Red & orange peppers, cut into 1/2 inch strips |
12 cups | Snow pea pods |
1-1/2 cups | Fresh cilantro, minced |
1-1/2 cups | Scallions, chopped |
1-1/2 cups | Peanuts, chopped |
Procedure
- Prepare noodles according to package directions; drain.
- Combine Saucemaker® Sweet Chili Sauce, soy sauce, lime juice and fish sauce in a large bowl.
- Add rice noodles, grilled chicken breasts, red and orange peppers and snow peas; toss gently to coat.
- Serve salad topped with cilantro, scallions and peanuts.
