Ingredients

6 lbsBoneless pork loin, sliced
7-1/2 cups (divided)Saucemaker® Szechwan Sauce
1/2 cupVegetable oil
12 cupsBroccoli
6 cupsBlack beans
6 eachMango, peeled and sliced
12 lbsRice noodles, cooked
10 cupsRadichio
10 cupsSpinach

Procedure

  1. Marinate pork in 3 cups Saucemaker® Szechwan Sauce for 1 hour and up to 12 hours.
  2. Remove from marinade; discard marinade.
  3. In a wok or skillet, heat oil over medium high heat.
  4. Stir fry pork for 2-3 minutes or until no longer pink and internal temperature reaches 160°F.
  5. Remove from skillet; keep warm.
  6. Stir fry broccoli for 2-3 minutes or until vegetables are tender.
  7. Add reserved pork, remaining Saucemaker® Szechwan Sauce and black beans.
  8. Bring to a simmer.
  9. Stir in mangoes.
  10. Arrange radicchio and spinach leaves on a serving plate; top with cooked rice noodles and pork stir fry.

Yield: 24 Servings
