Ingredients
6 lbs | Asparagus, trimmed, cut into 1-inch pieces |
12 cups | Snow peas |
12 cups | Red bell pepper, julienned |
3/4 cup | Vegetable oil |
12 cups | Carrot, shredded |
48 oz | Water chestnuts, sliced, drained |
6 lbs + 12 oz (18 cups) | Asian Pad Thai Noodles, cooked |
1 qt | Rod’s® Thai Sesame Dressing |
6 cups | Peanuts, chopped |
1/2 cup | Green onions, chopped |
Procedure
- In a large skillet over medium-high heat, sauté asparagus, snow peas, and red pepper in oil for 2-3 minutes or until tender.
- Add carrot, water chestnuts, cooked noodles and Rod’s® Thai Sesame Dressing; heat through.
- Serve topped with peanuts and green onions.
